Wild Mushroom Empanadas

Wild Mushroom Empanadas

Serves 12

 

Ingredients:

2 medium onions, finely chopped

6 tablespoons unsalted butter

2 pounds wild mushrooms, finely chopped

2 small red bell peppers, finely chopped

4 ounces Serrano or prosciutto ham, chopped fine

1/3 cup sherry wine

1/4 cup fresh Italian parsley, chopped

3 tablespoons grated Parmesan cheese

Salt and freshly ground black pepper

1 (17 1/4-ounce) package frozen puff pastry sheets (2 pastry sheets) thawed

Egg wash, made by beating 1 large egg with 1 teaspoon water

 

Instructions:

In a 12-inch frying pan set over moderately low heat, cook onions in butter, stirring occasionally, until soft. Stir in mushrooms and bell peppers and cook over moderate heat, stirring occasionally, until liquid mushrooms give off is evaporated and mixture begins to brown. Add ham and Sherry and cook, stirring, until liquid is evaporated.

In a bowl stir together mushroom mixture, parsley, and cheese. Season with salt and pepper to taste and cool mushroom mixture.

Preheat oven to 400 degrees F.

On a lightly floured surface roll out 1 pastry sheet into a 14 by 10-inch rectangle. Cut pastry sheet with a 2 inch round cutter and place 1 teaspoon of mushroom filling in the middle of each round. Brush edges of mushroom-topped pastry round with some egg wash and fold in half. Crimp edges of dough together with fork tines. Carefully transfer empanadas with a spatula to a large baking sheet. Make more empanadas in same manner with remaining puff pastry sheet, filling, and egg wash. Put empanadas in middle of oven and reduce temperature to 375 degrees F. Bake empanadas until golden, about 15 minutes. Serve warm.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
