Tagine of Chicken With Preserved Lemon and Olives

(Yield: 4 Portions)

 

1 Chicken, 2 ½ lb, 8-cut

Salt & Pepper (as desired)

3 Tbs Olive Oil

1 Cup Onions, minced

1 ½ tsp Garlic, minced

½ tsp Saffron

½ tsp Ginger, ground

1 ¼ Cups Water or Chicken Stock

½ each Lemon, juice only 1 each

Preserved Lemon, peel only, cut in thin strips

1 ½ dozen Olives

2 Tbs Cilantro, chopped

2 Tbs Parsley, chopped

 

Season chicken with salt and pepper. In a heavy-bottomed sauté pan over medium heat, brown chicken. Remove chicken from pan and reserve for later use. Add onions and olive oil to pan and cook until onions are translucent. Add garlic, saffron, and ground ginger to onions. Stir to incorporate. Return chicken to the pan, add water, and adjust heat to a simmer. Cover and cook until breasts are done, about 15 minutes. Remove breasts from pan and reserve for later use. Continue cooking dark meat until done, about another 15 minutes. Add more water if necessary. Return breasts to pan and reheat. Add lemon juice, preserved lemon peel, olives, cilantro, and parsley. Cook uncovered to heat ingredients and reduce liquid in pan to sauce consistency. Serve chicken at once on a serving platter or individual plates.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

Privately Contracted Events, Gastronomic Tours & Events at Sapore are Non-Refundable

LIABILITY

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
