Description

Orange Cranberry French Toast Casserole

Serves 6- 8 people

Ingredients:

For French toast:

16 oz. loaf French bread

½ cup dried cranberries

¼ cup of Grand Marnier or orange juice

8 oz. package cream cheese, room temperature

¼ cup granulated sugar

¼ cup orange marmalade

For Casserole:

4 eggs

1 cup whole milk

¾ cup granulated sugar

1/8 tsp. salt

1 tsp. cinnamon

¼ cup unsalted butter, melted

½ cup toasted almond slivers

For garnish:

Powdered Sugar Fresh Orange sliced into wedges

Candied Orange Peel

Instructions:

1. Slice loaf of bread into thin slices about ¾ inch thick. Presoak dried cranberries in Gran Marnier to re-hydrate.

2. Prepare a 9x13 glass baking dish with non-stick cooking spray or a thin coat of butter. 3. In a mixing bowl, incorporate cream cheese, 1/4 cup sugar, strained cranberries, and orange marmalade.

4. Make a sandwich with the bread by spreading approximately 1 tablespoon of the cream cheese mixture on one side of a slice and top with another slice. Place the bread in prepared glass baking dish in one layer.

5. In a different mixing bowl, whisk together eggs, milk, 3/4 cup sugar, salt, and cinnamon and pour over the bread in the dish. Allow the bread to soak up the liquid on one side for approximately 5 minutes then flip each sandwich over carefully to allow the other side to get soaked as well. You can cover the dish tightly and refrigerate overnight which would allow you to bake in the morning or if you choose to bake and serve right away, allow it to sit an additional 10 minutes while the oven preheats.

6. When ready to bake, preheat oven to 400 degrees F. Uncover baking dish and drizzle top with melted butter and toasted almonds.

7. Bake at 400 degrees until golden brown – approximately 30 minutes. To serve, slice and place on a dish with a light dusting of powdered sugar and candied peels on top and a wedge of orange on the side.
