Lemon Mascarpone Swiss Roll" with Raspberry Couli


Sponge Cake:

6 large eggs

1/2 tsp. salt (divided use)

1/2 cup granulated sugar

1 tsp. baking powder

1 cup all purpose flour

1 tsp. vanilla sugar

1tsp. lemon extract

Lemon Mousse:

1/2 cup freshly squeezed lemon juice

1/4 cup sugar

3 large eggs

2 tsps. gelatine powder

3 Tbs. grated lemon zest

2 tsps. lemon extract

8 ounces Miceli Mascarpone cheese

Instructions: Sponge Cake

1. Preheat the oven to 350°F. Grease and line a jelly roll pan with parchment paper.

2. Separate the eggs. Beat egg whites with half of the salt until soft peaks form

3. Beat egg yolks with sugar, vanilla and lemon extract until pale yellow.

4. Sift flour, baking powder and remaining salt and fold into yolk mixture, alternating with egg whites.

5. Pour batter into prepared pan. Bake for 30-35 minutes or until lightly brown in color. 6. Remove from the pan and let it cool.

Instructions: Lemon  Mousse

1. In the bowl of an electric mixer, beat egg whites with 2 tablespoons of sugar until soft peaks form. In a separate bowl, beat egg yolks, 1 tablespoon of sugar and lemon extract.

2. Dissolve the gelatine in 4 tablespoons of lemon juice. Heat to warm, add remaining lemon juice and lemon zest and mix well. Add to egg yolk mixture.

3. Fold egg whites and mascarpone cheese to yolk mixture.

To Assemble:

1. Brush cake with lemon liquor mixture. Spread evenly with mousse.

2. Roll up cake from short end, wrap in plastic and refrigerate until ready to serve.

3. Slice and serve with raspberry couli.

Raspberry Couli


2 cups fresh berries or frozen whole raspberries, thawed

3 to 4 tablespoons sugar

1 tablespoon fresh lemon juice

2 Tbs. Chambord or other liqueur Puree berries, strain if desired.

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees.
