Frittata Roll with Roasted Red Pepper Sauce
Description

Ingredients

2 Tbsp. unsalted butter 
2 Tbsp. extra virgin olive oil 
1 large onion, chopped 
1 lb. fresh spinach, finely chopped 
1/4 tsp. nutmeg 
Salt and freshly ground pepper 
4 large eggs, separated
1 tsp. each parsley, chives, tarragon
1/4 cup grated Parmesan cheese 
2 large red bell peppers, roasted and cut into thin slices
8 oz. softened goat cheese
Salt and pepper, to taste

Red Pepper Sauce Ingredients:

2 shallots chopped 
2 roasted red peppers
¼ cup extra virgin olive oil
1tsp. fresh tarragon 
1 tsp. salt 
1/4 cup vegetable stock
4 Tbsp. tarragon vinegar 

Instructions

In a food processor work all the sauce ingredients until smooth and creamy. Set aside.

Line with parchment paper the bottom of a jelly- roll pan. Grease with butter. Preheat the oven to 400 F.

In a large skillet, heat butter and oil over moderate heat. Add the onion and sauté until soft.

Remove from the heat and add the spinach, Parmesan, nutmeg, salt, and pepper. Let cool slightly. 

Whisk the egg whites with salt until soft peaks form. Whisk the yolks and add one a time, to the cooled spinach mixture and stir to incorporate. Gently fold in the beaten egg whites.

Spread the mixture evenly in the prepared baking dish and bake for about 10 minutes, or until the frittata is firm to the touch.

Remove the frittata from the oven and gently turn it upside down onto a piece of parchment paper. Peel the paper from the frittata and cool.

Spread the goat cheese all over the frittata roll, top with prepared spinach mixture and finish with roasted peppers. Roll the frittata up into a log roll and serve with red pepper sauce.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

Privately Contracted Events, Gastronomic Tours & Events at Sapore are Non-Refundable

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
