Lemon Chiffon Cake

Ingredients:

8 Fl oz Egg whites, room temperature
6 Fl oz Egg yolks, room temperature
1 Cup Sugar
½ Cup Vegetable oil
2 Tsp Baking powder
¼ Tsp Salt
1 Each Lemon – juice and zest
1 Tsp Lemon extract
1 ½ Cups Sifted cake flour
1 Tsp Vanilla extract
2 Tbs Confectioners’ sugar
1 Pinch Salt

Preheat the oven to 350 degrees. Grease and flour a 9 inch bundt, springform or tube pan. Sift together flour, baking powder, and salt. Beat egg whites until white and foamy. Add 2 tablespoons confectioners' sugar and a pinch of salt and beat until stiff but not dry. In the mixer, beat the yolks and sugar until thick and lemon in color. Add oil, vanilla, lemon juice, zest and extract. Add flour and mix well. Fold in egg whites. Pour batter into prepared pan. Bake for 35 to 40 minutes. Remove from the oven and cool. Reserve.

LEMON CHIFFON GLAZE
1 Tbs Lemon juice
1 Cup Confectioners’ sugar
1 Tsp Lemon zest
Make the glaze by mixing all ingredients until smooth. Spread glaze on top of warm cake and let it drip down the sides.

LEMON CHIFFON SAUCE
1 Pint Fresh strawberries
¼ Cup Fresh lemon juice
¼ Cup Sugar
1 Tsp Grated ginger
1 Tbs Sweet liqueur
Prepare fresh strawberries by cleaning and trimming. Slice strawberries and sprinkle with juice, liqueur and sugar. Marinate a few hours and serve with the cake.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

LIABILITY

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
