Whole Wheat Peach Ginger Upside Down Cake

Serves 8

 

Bottom of Cake:

1/4 cup unsalted butter

1/2 cup light brown sugar

1 teaspoon pumpkin pie spice

3 large ripe peaches, sliced

¼ inch thick

2 teaspoons lemon juice

 

Cake:

3 tablespoons unsalted butter, room temperature

3/4 cup granulated sugar

1 large egg

1/2 cup heavy cream

1 teaspoon almond extract

1 1/3 cups whole wheat flour

2 teaspoons baking powder

1/4 teaspoon salt

¼ cup granulated ginger, minced

 

Bottom of Cake: Line an 8 x2 cake pan with parchment paper. Preheat the oven to 375°F. Slice peaches and toss with lemon juice. Arrange peaches in pan. Melt the butter, and mix with brown sugar, and spice. Spoon the mixture into pan. Set aside.

 

Cake: In a kitchen mixer, cream the butter and sugar. Add in egg, cream and almond extract. Sift together flour, baking powder and salt. Add dry ingredients to egg mixture Fold in the candied ginger. Carefully pour the batter over the fruit in the pan so not to disturb the fruit arrangement. Bake the cake until the cake begins to pull away from sides of pan, and the center springs back to the touch, approximately 30-45 minutes. Remove from the oven, and allow to cool 10 minutes in the pan. Invert the pan onto a serving platter, and let it sit 1 minute more before removing pan. Serve with almond gelato.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
