This class is a continuation of Techniques of French Cooking 1, but you may sign-up for this class without having completed French Cooking 1.

The Exhilarating and exquisite cuisine of France can be at your fingertips by learning the perfect classic techniques with the appropriate blend of ingredients and spices. Based on the teaching of the father of modern French gastronomy, August Escoffier, you will explore through demonstration and participation regional French cooking at its best. Using fresh seasonal ingredient students will create a variety of Classical regional specialties under the watchful eye of Chef Tim. In this series each week, the class will prepare and sample a full menu. 

Learning objectives: Simplified techniques, foundation of stock and sauces, meat, fish and fowl cookery, boning techniques, mousseline, confit, flaky pastry, baking, and roasting.

Week 1 Paris & Ile-De-France: Traditional Baguette; Creamy Potato Leek Vichyssoise Soup; Parisian Bistro Salad; Chicken Fricassee; Slow Roasted Salmon Confit; Haricots Verts Salad; Vanilla Bean Crème Brulee

Week 2: Alsace & Lorraine Quiche Lorraine: Mushroom Pate; Roasted Beet Salad; Alsatian Pork & Sausage Sauerkraut Choucroute; Duck Breast a’ L’Orange; Potato Dauphinoise; Plum Tart

Week 3: Gascony & Basque Country: Warm Mushroom Salad; Potage Parmentier; Poulet Basquaise; Meat & Bean Cassoulet; Moules a la Mariniere; Cherry Clafoutis; Lace Cookies




All classes are to be paid for in advance. Reservations will not be guaranteed until payment is received.


At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.
