Roasted Stuffed Turkey Breast
Description Roasted Stuffed Turkey Breast

Ingredients:

Large boned turkey breast
8 mortadella slices
16 oz. ground sweet Italian sausage or veal sausage
2 large eggs
1/2 cup grated parmesan cheese
1 lb. ricotta cheese
1 medium onion, chopped
1 tsp. juniper berries, chopped
1 tsp. fresh sage, chopped
1 Tbsp. butter
1 Tbsp. olive oil
1/2 cup dry white wine
1/2 cup chicken stock
Salt and pepper

Butterfly turkey breast and flatten it out. Make shallow cuts in thick parts of turkey before pounding. With a pounder, pound turkey to an even thickness. Top with mortadella slices. In a bowl, mix the sausage, eggs, ricotta and parmesan cheese, onion, sage and berries. Layer mixture on top of the mortadella slices. Roll the meat up tightly and truss with string. Put the butter and oil in a roasting pan. Season the roll with salt and pepper and set in a 375°F. oven for 45 minutes. Add the wine and the stock to the pan a little at a time to keep the cooking juices moist and baste the roll often. Turn often to insure even browning. Test for doneness before removing from the oven. When done, remove from oven and allow to cool slightly. Remove turkey from pan and strain the sauce. Arrange the sliced roll on a platter and pour pan juices over it and serve.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

LIABILITY

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
