Pomodoro Soup Shots

Serves 8

1 can (36 ounces) chopped tomatoes
2 cups tomato sauce
4 cloves garlic
1 small onion, peeled and chopped
1 small carrot, peeled and chopped
1/4 cup extra virgin olive oil
1 tsp. salt
1/8 tsp. Tabasco sauce
1 cup tomato juice
1 Tbsp. Vodka

Heat the oil in a heavy large soup pot over high heat. Add the onion and sauté until soft, about 10 minutes. Add the carrots and garlic sauté until the vegetable are soft about 5 minutes. Add the chopped tomatoes and sauté for 5 more minutes. Add the tomato sauce, Tabasco, tomato juice, salt and basil. Bring the soup to a boil, and then reduce the heat to a simmer. Simmer for 20 minutes.

Taste and season the soup to taste. Remove from the heat allow the soup to cool slightly. Working in batches if necessary, pour the soup into the bowl of a food processor or the jar of a blender fitted with a metal blade (or puree it directly in the pot with an immersion blender) until it is smooth. Return the pureed soup to the pot. Stir in the vodka. Season the soup with additional salt to taste.

Ladle the soup into chilled martini glasses and top with basil.

Caprese Salad Skewers

Makes 8 skewers

8 small skewers
24 cherry tomatoes
16 small fresh mozzarella ciliegine
16 small basil leaves

Clean tomatoes and basil leaves well. To build skewers, start with tomato, then cheese, then basil, and repeat, ending with a third tomato.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
