Arancini Balls Stuffed with Mozzarella Cheese
Description

Ingredients

1 1/2 cup raw Arborio rice
1/4 cup grated Parmesan cheese
1/4 cup butter
4 lg. eggs
1/4 cup grated Parmigiano cheese
4 cups hot broth
1 cup Italian breadcrumbs
1 cup fresh mozzarella, cut into cubes
Salt and pepper
Italian parsley, chopped

Tomato Sauce
1 cup soffritto (finely chopped celery, carrots and onions)
2 cups tomato, seeded and chopped 
2 cups tomato sauce
2 cloves garlic, minced
2 Tbsp. olive oil
1 tsp. fresh basil, chiffonade
1 tsp. salt
1/2 tsp. freshly grated pepper



Instructions

Heat butter in a large frying pan. Add rice and cook for a few minutes while adding chopped parsley. Stir while adding the broth a little at a time. Cook until rice is soft and broth is absorbed. Season with salt and pepper.

Sprinkle cheese over rice. Add two eggs, scrambled to the rice and mix well. Set aside to cool.

Beat the remaining two eggs with salt and pepper. Place breadcrumbs on a plate.

Take the prepared rice and form into little balls. Stuff with one cube of mozzarella cheese. Roll rice balls in egg mixture and then into breadcrumbs. Fry the rice balls until golden brown. Drain on paper towels.

Tomato Sauce
In a large non-reactive saucepan, cook soffritto and garlic in olive oil until onion is transparent. Add chopped tomatoes and sauce. Season with salt and pepper. Simmer for 20-30 minutes to thicken at medium heat. Add basil and cook for a few minutes.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
