Lorenzo Caponetti is visiting the USA from the most beautiful Etruscan Valley of Italy. His family's farm right outside of Rome, Casa Caponetti, produces organically one of the best Italian Olive Oil. Lorenzo will guide the class through a tasting and explain the journey of the olives while Loretta will prepare a delicious meal using the very best oils.
Menu: Creamy Polenta with Seared Scallops, Celery & Pecorino in Herb Sauce, Zuppa di Faggioli with Roasted Garlic Crostini, Fettuccine Alla Papalina with Pancetta & Olives, Chicken Saltimbocca with Artichokes & Capers, Insalata Verde with Basil Oil, Lavender Olive Cake with Limoncello Cream Sauce
